If you are excited about pumpkin spice latte season, then this is the recipe for you and I know you are going to love it.
You will probably look at these photos and think “there is no way something this tasty could be vegan” and I can promise you that that isn’t true! This recipe is 100% vegan!
Of course you can pay $5-7 for one, but why not make this Starbucks Copycat pumpkin spice latte that is vegan too?
It is actually way cheaper and once you buy the ingredients, you can make many lattes using what you buys!
In addition, until recently, Starbucks never even used real pumpkin in their PUMPKIN spice latte! Say what?!
It is true! They used a bunch of artificial ingredients and weird crap. Of course it tastes good, but it sure isn’t a healthy pumpkin spiced latte.
My vegan version is so darn good and tastes just like a pumpkin pie or my Vegan Pumpkin Cheesecake right in your mouth!
The best part is that making the vegan latte is so quick and easy and literally takes less than 5 minutes. So you can quickly whip this warming beverage up whenever you feel like it.
You can choose your level of sweetness and you can use maple syrup or plain sugar for sweetening. If you have flavored syrup, you can use that too but they aren’t always vegan!
You can make this vegan pumpkin spice latte using regular coffee, espresso, or instant coffee. If you have made drinks such as my Greek Frappe you may even have instant coffee on hand.
Finally, we are going to top the latte better than Starbucks ever could! And that is saying a lot because Starbucks does a darn good job! This is truly one of my favorite Cozy Vegan Fall Recipes and I know you are going to love it!
I like to top my vegan Starbucks pumpkin spice copycat recipe with vegan whipped topping, a dash of cinnamon, and a drizzle of my Vegan Caramel Syrup.
I also like to top if with a cinnamon stick for swirling because it is cute and adds a touch of style!
Many whipped toppings such as Cool Whip are naturally vegan. Some are filled with chemicals, sure, but are vegan nonetheless! Just read the packaging!
If I am feeling frisky, I will sub out pumpkin pie spices and shake those on instead of cinnamon for an even strong flavor.
My vegan pumpkin spice latte is easy and delicious and will warn even the coldest heart! I promise!
How To Make The Vegan Pumpkin Spice Latte
As I said above, making the vegan pumpkin spice latte takes less than 5 minutes and is a quick and easy process.
In fact, you can make it all year as most stores sell canned pumpkin puree during all seasons.
This way, you don’t have to wait for Starbucks to put out their limited edition pumpkin spice latte!
When it comes to your homemade pumpkin spice latte, you really get to customize the flavor.
I love adding maple syrup AND sugar. I like sweeter beverages so if you do too, you are going to need a LOT of maple syrup.
I like both because maple syrup adds a fall flavor and sugar adds the sweetness quickly!
Plus, at the end of the day, pure sugar is healthier than fake “syrups” you buy from the store. At least you know what you are getting and it isn’t chemicals!
All you are going to do is add your non-dairy milk, pumpkin puree, maple syrup, sugar, and pumpkin pie spice to a small saucepan.
I recommend making the pumpkin spice latte with almond milk or another “thicker” and creamier non-dairy milk such as flax milk.
While it still works okay, thinner milks like rice milk don’t give the latte as creamy of a texture.
Use a whisk and whisk on low-medium heat until warmed throughout and combined.
Now, add in your coffee.
If you are using regular brewed coffee, you are going to add in 1/2 cup for everyone having the drink.
If you are using espresso, you are going to add in 1-2 shots of espresso for everyone having a vegan pumpkin spice latte.
If you are using instant coffee, you are going to want to use 1-2 teaspoons per person.
Before you take it out of the pot, but sure to do a taste test for sweetness!
I recommend 2 tablespoons maple syrup and 1-2 tablespoons of pure sugar per person.
I don’t think that plain maple syrup is sweet enough and highly recommend using both or doubling the amount of maple syrup!
Of course, you can customize to your taste preference when making the vegan pumpkin spice latte.
Once you whisk it all together and combine it and warm it up, you are done!
That is it!
As fast as you can get the ingredients into a pot and warm it up is as fast as you can enjoy your very own homemade vegan pumpkin spice latte.
Of course, don’t forget to decorate!
Decorating is my favorite part and really adds the cozy look and feel to your drink.
Since you are saving so much money from not going to Starbucks, may as well make it as fancy as can be at home, right? Right!
I recommend vegan whipped topping, a dash of cinnamon, and some vegan caramel drizzled over the top. You can swirl it around with a cinnamon stick.
You can get cinnamon sticks for cheap at the dollar store and you get like 15 for $1! I also recommend eating some Vegan Pumpkin Brownies with this latte as it is so yummy!

Easy Vegan Pumpkin Spice Latte
This vegan pumpkin spice latte is indulgent and creamy and way cheaper and healthier than the Starbucks version! It takes less than 5 minutes to make and is so aromatic and tastes just like fall. You can top it any way you want and switch up the sugar content to your taste preference! There is no way you can go wrong when making this vegan pumpkin spice latte!
Ingredients
- 4 tablespoons canned pumpkin puree
- 4 tablespoons maple syrup (or to taste)
- 2 tablespoons sugar (or to taste)
- 2 cups non-dairy milk
- 1 cup coffee or 2-4 shots of espresso or 4 teaspoons instant coffee
- 1 teaspoon pumpkin pie spice
- vegan whipped cream, vegan caramel sauce, and cinnamon for topping
Instructions
- In a medium saucepan over low heat, combine pumpkin puree, maple syrup, sugar, pumpkin pie spices, and non-dairy milk. Whisk until incorporated and until there are no lumps from the pumpkin puree.
- Add in coffee/espresso/instant coffee and whisk until combined.
- Taste for sugar and add more sugar if desired. I found that the pumpkin spice latte needed a bit more sugar than just a little maple syrup but everyone's preference is different.
- Pour into your mugs and garnish with vegan whipped cream, vegan caramel sauce, cinnamon and more! Add a cinnamon stick for swirling.
Notes
If you do not have pumpkin pie spice on hand, use cinnamon and a little nutmeg, ground cloves, and ground ginger.
If you want to make this pumpkin spice latte without coffee, you can sub for decaf or simply add in more non-dairy milk in place of the coffee. Adjust the taste for sweetness!
If you do not have vegan whipped cream but still want a frothy beverage, you can put the whole latte into the blender and give it a good whir until smooth and foamy. Top as desired after this!

Nope!! Anything thicker, not thin like rice milk! I have used oat milk, cashew milk, flax milk etc!
