Despite the name, coffee cake actually has no coffee at all in it, so if you are looking for a yummy treat without any caffeine, this is it!
At the end of the day, it actually isn’t all that unhealthy at all and when you make this vegan coffee cake at home, you know exactly what is going into it!
The vegan coffee cake in a mug isn’t laden with sugar or any weird ingredients like you would see at the store, yet it tastes so good and the sugary topping is so yummy.
If you are new to making mug cakes, you are in for a real treat.
All you have to do is whisk together your dry ingredients in the bottom of your mug and then add your wet ingredients until a batter forms.
For this recipe, we do create an easy struesel topping because that is what makes the coffee cake so that does add an extra step, but it is nothing too crazy!
Finally, you microwave the vegan coffee cake in a mug for 1-2 minutes until cooked throughout!
As a result, from start to finish, this coffee cake in a cup takes about 3 minutes at the most! 1 minute for getting the ingredients together and up to 2 minutes for cooking it.
If you want a really healthy vegan coffee cake, you can leave off the sugar topping, but it is a hallmark of coffee cake so I highly recommend leaving it on!
When choosing your mug, just make sure that this vegan coffee cake has enough room to rise so that it doesn’t explode all of your microwave as that isn’t fun to clean up.

How To Make The Vegan Coffee Cake In A Mug
Making the vegan coffee cake in a mug is actually a fairly simple process.
First, we have to choose the appropriate mug. You will want a mug that the coffee cake can grow into, so make sure you are using one that isn’t too teeny tiny.
I would say any mug that is medium-sized should work well with this recipe, but if you are worried, you can choose a larger mug!
We are going to mix the dry ingredients in the bottom of the mug. You want to use a whisk or a fork to ensure that they are combined.
For this recipe, the dry ingredients would be baking powder, flour, cinnamon, and sugar. Whisk these together at the bottom of the mug.
Next, add your wet ingredients.
Now, you have two options! You can either use 2 tablespoons of applesauce or 2 tablespoons of mashed banana.
It doesn’t matter, whatever you have on hand works perfectly fine.
Both of these ingredients are vegan egg replacements and work well with the flavor of this coffee cake in a mug.
I know some people HATE bananas, so I wanted to give another option as the coffee cake does take on a slight banana flavor, but I personally think it adds, not takes away!
Now you are going to combine your wet and dry ingredients until a thick batter forms. Make sure to scoop up from the bottom of the mug so that you get all of the flour. If you don’t do this, there may be some uncooked flour at the bottom after you microwave it!
Now it is time to make the struesel topping. To do this, all you need to do is add Vegan Butter, sugar, and flour in a bowl.
Use a fork to combine until a gravely texture is formed. Place the topping over the vegan coffee cake in a mug and make sure it is evenly spread.
Now, microwave the vegan coffee cake for 1 minute or until cooked. I usually have to microwave this vegan coffee cake in a mug for at least 2 minutes.
After the first minute, take it out and check to see if the top is cooking nicely. If it isn’t, go ahead and put it back in the microwave and run it for 30 second increments.
Let cool for a few minutes and serve hot, along with coffee of course! May I suggest serving it with my Greek Frappe? One of the best drinks ever!

This vegan coffee cake in a mug is so easy and delicious to make. With a warm and cinnamon-flavored interior and an easy-to-make struesel topping, it is sure to be a winner in your family. This is an easy to way to make vegan coffee cake in a pinch!
Ingredients
- 1/4 cup flour
- 2 tablespoons applesauce OR mashed bananas
- 2 tablespoons brown sugar
- 1 tablespoon oil
- 1 tablespoon non-dairy milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla
- FOR TOPPING:
- 2 tablespoons flour
- 1 tablespoons sugar
- 1 tablespoon vegan butter
Instructions
- In the bottom of a mug, combine your dry ingredients and whisk together. Your dry ingredients are flour, sugar, baking powder, and cinnamon.
- In the same mug, add your wet ingredients which are your vanilla, applesauce/mashed banana, oil and milk. Mix until the vegan coffee cake in a mug batter is well combined and thick. Make sure to scoop up all the flour from the bottom of the mug so that everything is mixed evenly.
- Next, make the struesel topping! In another bowl, combine flour, vegan butter, and brown sugar. Use a fork to mash together until it is gravely in texture. Dump this onto your coffee cake batter.
- Microwave your vegan coffee cake in a mug for 1 minute. Then at 30 second intervals until it is cooked and the top is spongy like a cake. Everyone's microwave is different so cook your cake for at least 1 minute before checking on it!
- Enjoy warm with your favorite cup of coffee.
