These vegan rice krispie treats are so delicious and yummy! They taste just like the kind you used to eat growing up, but are 100% vegan and so delicious!
Whether you call it rice krispie [like the cereal] or “crispy” like the texture, it still tastes darn delicious and is so yummy!
I find that vegan marshmallows actually melt beautifully and create some of the best tasting rice krispie treats you will ever have. I have never had an issue with this and hope you won’t either!
My favorite thing about these vegan rice crispy treats is that you can customize them any way you want!
Do you want to add in crushed Oreos? Sprinkles? Dried fruit? You can simply mix in to this recipe!
I have provided you with the classic way to make vegan rice krispies so that you have good base recipe and then you can go wild with the add-ins.
When it comes to making vegan food, I try to not reinvent the wheel.
People have been making rice krispie treats for a long time now, so why not just veganize the way you already make it?
This involves a fat such as butter, marshmallows, and the rice krispie cereal. I throw in a little vanilla which gives this recipe an “elevated” flavor and you are done!
For these healthy rice krispie treats, we use just 4-ingredients and it takes less than 10 minutes to put together!
All you have to do is wait for them to chill before cutting and eating them.
I truly can’t get over how amazing the vegan marshmallows melted and how delicious the final result came out to be!
This is a recipe that you can customize for any time of year just by changing up the fillings!

Where To Find Vegan Marhsmallows
You can find vegan marshmallows at most health food stores such as Whole Foods Market, Trader Joes, and your local shop.
The brand I use is Dandies Vegan Marshmallows and they are quite good and realistic!
If you live in a place without a lot of health food store options or your Whole Foods happens to be out, you can buy Mini Vegan Marshmallows From Amazon!
I recommend buying a 2-pack so that you can use them in another delicious vegan baking recipe.
I love using the Dandies mini marshmallows when making these vegan rice krispie treats because they are easy to melt and super realistic!
If you can only find large vegan marshmallows, that is fine, simply take your scissors and cut them up into smaller pieces to help with melting!
How To Make Vegan Rice Krispie Treats
Making vegan rice krispie treats is so easy and takes only 4 ingredients and about 10 minutes of time.
In fact, if you don’t have vanilla on hand, you can use just 3 ingredients!
All you have to do is put your vegan marshmallows and vegan butter in a pot on the stove.
I use mine over medium-high heat because I love cooking over high heat because things cook faster!
However, you have to monitor the process so they marshmallows don’t burn.
A lot of other recipes for vegan rice krispie treats say that the vegan marshmallows don’t melt all that well or that they become hard after cooking.
This is not the case at all, from what I’ve found and I think it is because of the amount of vegan butter I use.
You can use coconut oil instead of vegan butter, but for a more authentic taste, I highly recommend using vegan butter, and lots of it, in order to help the vegan mashmallows to melt.
Go ahead and melt your marshmallows and vegan butter and vanilla over the stove. Continue to turn the marshmallows until they begin to melt.
Use your spatula to break them apart and help them melt into a big lump.
Eventually, they will all melt together and form a large butter-covered clump.
At this point, remove them from the heat and stir in the rice krispie cereal.
I recommend about 4-5 cups of rice krispie cereal, but you can add more based on your recipe!
You want there to be a lot of rice krispie cereal so that all of the vegan marshmallows are coated and covered and there aren’t too many left over!
Use your spatula to stir it around until the rice krispie treats are completely covered with the marshmallows.
Then, grease your baking dish with oil or line it with parchment paper.
I find that greasing the dish with my finger tips and a little bit of oil really helps to remove the vegan rice krispie treats very easily.
Use your hands to press the healthy rice krispie treats down into the dish until the mixture is evenly dispersed.
Then, all you have to do is pop it in the fridge for 20-30 minutes until chilled and you are ready to eat it!
To serve, cut your dish in half. Then cut each side in half again. And so on and so forth until you have the even pieces for your whole dish of vegan rice krispies!
How To Store The Vegan Rice Krispies
To store the vegan rice krispie treats, put them in an air-tight container in the fridge.
They last about 2-3 days before the vegan marshmallows start to get funky so this is a recipe that you want to make and eat pretty quickly.
You can easily make these healthy rice krispie treats the night before and simply keep them in your baking dish in a plastic bag in the fridge. Or you can cut them out and store them in a container.
I do not find that these vegan rice krispie treats stick together like the regular kind do, so I don’t see the need to use wax paper to keep them apart, but that is up to you if you want to!

Classic Vegan Rice Krispie Treats
These vegan rice krispie treats are a delicious vegan take on the classic dessert! They are so easy to make and just take a few minutes of your time to make. The vegan marshmallows melt wonderfully to create a gooey rice krispie treat you will love.
Ingredients
- 10 ounces vegan marshmallows [I use Dandies brand mini-marshmallows]
- 2/3 cup vegan butter/margarine
- 1 tsp vanilla
- 4-5 cups crispy rice cereal
Instructions
- In a pot on the stove, melt vegan butter and vegan marshmallows until melted and combined. Use medium-high heat and stir constantly. The vegan marshmallows will take a little bit to melt, but the higher amount of vegan butter will help them melt!
- Once they begin to melt, stir in your vanilla and continue to stir until melted and combined. The vegan marshmallows will lump together and will puff up in size. At this point, they are pretty much done! Use your spatula to break up any larger pieces that don't melt.
- Remove your pot from the heat and stir in the crispy rice cereal. Use your spatula to ensure that it is well combined. I say 4-5 cups of crispy rice as you may need even more. You want to ensure that all of the vegan marshmallows are evenly coating the crispy rice and that there are no chunks of marshmallow. Stir until fully combined and add more crispy rice if necessary.
- Grease an 8x8 baking dish with oil or line with parchment paper and use your hands to press the vegan rice krispie treats into the dish. Make sure the mixture is evenly distributed.
- Chill the vegan rice krispies in the fridge for 20-30 minutes or until cooled. Slice and serve!
